Lightly toast the bread and make the poached or poached eggs.
Put a little olive oil or butter in a pan and toast the ham. In the same pan with a little more oil, make the spinach with salt to taste, just until they are a little tender.
You will have the hollandaise sauce freshly prepared and also keeping it warm, at about 65oC and we will grate half a truffle in this sauce.

Place the bread as a base, on it a bed of spinach and on top of it the ham or the crispy bacon. Place the poached egg on top, grating the other half of the truffle and finish by adding the hollandaise sauce with truffle.
